Sydney Rock Oysters (Saccostrea glomerata) are Australia's native oyster with a small triangle like shell and soft yellow flesh. Their growth region ranges from Harvey Bay Queensland, down to Wingam Inlet in Victoria.

They are slower growing than their cousins, Pacific Oysters and boast a rich mineral like taste. They have captured the hearts (and stomachs) of oyster connoisseurs nation-wide. They are best eaten naturally so your senses can take hold of all the different flavours of the ocean, from the creamy and sweet, the rich umami flavours, the salty brine & seaweed notes. Umami means essence of deliciousness in Japanese and we certainly think this is the perfect description for them.

We source Sydney Rock Oysters from many premium locations along the NSW coast. Port Stephens, Wallis Lakes, Cromarty Bay, Corrie Island, Pambula, Merimbula, Tea Gardens, Wagonga Inlet & more. Unfortunately the recent weather events has impacted the rivers and estuaries, causing a reduction in supply. However the farmers are working incredibly hard to bring the health and qualities of their oysters back up.
